Why such a contrast in the bright white #spiders and the dark red soil? Is it #frost lined river beds or something?

Might be the angle of the sun and reflection or frost in them. The channels are carved into the surface of Mars by carbon dioxide gas trapped under the thawing carbon dioxide ice sheet on the south pole of Mars. You can learn more about what these features are here and here.
